Well, I’m finally starting to feel like the living again. My nose is still seriously stuffed up, but other than than, I’m feeling pretty good. Riley seems to be better as well, just a runny nose. Wowee, I am tired though. Got to bed late and then the alarm clock didn’t go off, so Marty and I woke up scrambling to get him ready for work. I am so THANKFUL that it’s Friday! I’m also thankful that I’ve gotten proficient at building fires…it’s cold in here this morning!
There’s not really anything on our schedule today. We’re going to go into town and meet Marty for lunch and then run a few errands. This weekend we’re going to do some major food shopping (if all goes well!). We’ve decided to go totally organic/grass-fed this year. So we’re going to start stocking up. This is going to be really expensive at first, as we have to buy alot of staple items which won’t need to be purchased every week. We’re also going organic on all our personal care items (shampoo, deodorant, toothpaste, etc.) We’re going to replace them with organic when we run out of the non-organic. Which reminds me, I need to buy some bath soap and dish soap this week, we’re plumb out! I sure wish we had a really good store in Waco that sold organics!

Riley and I are sick today. We’ve got some kind of a head cold or sinus or upper resp. thing going on. W’re miserable! My nose is stuffed up and I have a huge headache, and Riley’s nose is running away with him. No homeschool today…which has Colt celebrating. He’ll do a little reading, but nothing major.
It’s a cold, wet, overcast day here…which doesn’t help any! I’m going to sit around today and take it easy. I’m going to stuff full of herbal teas and maybe do some scrapbooking, depends on how my head feels. For now, though, I think I’m going to crawl back into bed and sleep for a bit if I can. Riley’s asleep in the recliner and Colt went back to bed when I told him there was no school today.

It’s Monday, so our week off is over and it’s back to homeschooling today. I can’t say that Colt’s too thrilled. It’s always hard to get him back on track after time off. We’re just going to ease back into it.
It’s a gray, drizzly, overcast day here. Very dull, but it’s not as cold as it has been. I’m thankful for that! I’m not planning on doing much today but homeschool, and maybe a digital layout or two. I’m trying to get my scrapbooking caught up, so you will probably be seeing quite a few layouts on this blog this year.
I’ve decided to move all my Nourishing Traditions stuff over to it’s own blog. I have many readers who come just for that reason and to make it easier, I created a blog just for that stuff. You can view the blog at www.susansnourishingways.blogspot.com. I plan on posting several new recipes every week, along with other NT info. So, if you’re wanting to continue reading my NT stuff, you will need to go there. YOu cn sign up for an email updates list on that blog that will email you everytime I update that blog.
I’m in the process of ordering a Kombucha scoby as well as kefir grains. I’ve never made either before, but I’ve been wanting to for some time. If anyone has any hints or knows of any good photo tutorials, please leave me a comment with the link!! We’re also planning on making our first batch of sauerkraut pretty soon, so any info on that would be appreciated too. Now that we have a refrigerator again, I’m going to enjoy making all the stuff I’ve been dying to try.
A couple of months back, we made our first batch of yogurt cheese. It turned out absolutely wonderful! The kids loved it and we ate it spread on bagels. I seasoned it with garlic, parsley, onion and basil. YUMMY!

We got my suburban back yesterday!! I’m so happy to be driving my own car again and not Marty’s!
Today we’re sitting here trying to stay warm, but at least it’s a sunny day and warmer than yesterday. We had drizzle and sleet most of yesterday, luckily nothing stuck or froze over. It’s a beautiful cold, sunny day here.
Marty had to work today, so my sole plan is to do a couple loads of laundry and scrapbook.
I had a couple of question from readers that I thought I’d answer…
About what I do with my digital layouts. I either print them off on my printer, or take them to Walmart and have them printed. My printer doesn’t print the greatest, so I prefer to take them to Walmart. I can get 10 layouts (8″x8″) printed there for about $20. This is worth it to me, as my printer doesn’t print as pretty as what I can have done at Walmart. I’m planning on printing out $20 worth each week, until I get caught up. Then, I’ll just get printed whatever I do each week. Now, I’ve got to stock up on 8×8 albums!! LOL!!
About my hair. Someone asked me how I got the soft curls in my hair in my picture. My hair is all one length and I just use hot rollers. I just purchased some of those new ionic rollers that are healthier on your hair than traditional rollers. I also don’t curl my hair like this very often, usually just once a week. When I do plan on rolling my hair, I go ahead and use an extra conditioner, to counteract the heat from the rollers.
Well, I’m going to tinker around on the internet for a little bit and then get back to scrapping! I’ve only gotten one layout done today, and would like to get a couple more done. Have a great day everyone!
NT Shepherd’s Pie
1 lb. ground grass fed beef
2 cup hot, freshly mashed potatoes
4 oz. yogurt cheese
1 cup cheddar cheese, grated
2 cloves garlic, minced
4 cups organic frozen mixed vegetables
1 cup beef broth, thickened with arrowroot
Preheat oven to 375 degrees. In a large skillet, brown the beef. In a separate bowl, mix together the potatoes and yogurt cheese. add 1/2 cup of the cheddar cheese and garlic; mixing well. Into the meat, stir in the mixed vegetables and thickened beef broth. Spoon into a square casserole dish. Cover with the potato mixture and then sprinkle with rest of the cheese. Bake for 20 minutes.

Yes folks, you heard it right…we are back online! I’m am just so THANKFUL!
We got our income tax refund back and I am so happy to be the proud owner of a brand new refrigerator (see it HERE)! We also put my Suburban in the shop to get the transmission fixed. We also got our internet back and a few other things. My car will be back in 7-10 days and the refrigerator is coming tomorrow.
All has been going well here the last few weeks since I last posted. Marty and the kids are well, homeschool is going well and life is good. GOD IS SO FAITHFUL!
I’ve been busy writing articles and several ebooks, which I’ll post more about tomorrow. I promise a LONG post tomorrow, but I just don’t have the time right now and it’s Marty’s turn to get online for a bit (the rest of the night!) We both sure have missed being online. I’m also working on a special something to celebrate being back online, so keep your eyes open for an announcement in the next day or two!
We’re Back Online! Granted, it’s still not high speed, but it’s a bit faster than dial up. I’ll post a real update later this afternoon when I get a chance. I’m so glad to be back!!
